         Corvallis Cafes, Restaurants

There are no mentions of restaurants or cafes in Corvallis during the early days of the town except for those associated with hotels. These hotels would hire an immigrant as a cook and then advertise that they had hired a chef from Europe specifically to cook "haute cuisine". During the anti-Chinese racism of the last half of the century, several advertised that they didn't hire Chinese cooks, which might seem to imply that the service industries were as dominated then by non-European immigrants as they are today.
